How to Season a BBQ Griddle for the First Time | Three Coats to Black

A new BBQ griddle is seasoned by washing off factory residue, heating it, spreading thin oil coats, and letting each coat smoke until the steel turns black and slick — usually three to five rounds.

That first dark coating is what keeps eggs sliding and steaks from welding themselves to the plate, and it takes under an hour once you know the order. Skip it and you’re cooking on bare, sticky steel. Rush it and you get a chalky, patchy layer that flakes into your food.

Why a New Griddle Needs Seasoning Before Anything Touches It

Factory griddle plates ship with a protective film of machine oil and dust, so the first job is removal, not oiling. Brand-new steel also has microscopic peaks and valleys that grab food; seasoning fills them with a polymerized oil layer that smooths the surface and blocks rust.

Seasoning Your BBQ Griddle: The Step Order That Works

Every major manufacturer follows the same rhythm — clean, dry, oil thin, heat to smoke, repeat — with slightly different heat and timing. Blackstone’s sequence works as the template.

  1. Shut it down first. Turn the control knobs and propane off, then disconnect the regulator before cleaning the new griddle plate.
  2. Wash the plate. Soap, water, and a sponge over the whole surface. Rinse the loose stuff off.
  3. Dry it completely. Heat the griddle on high until it starts to discolor — that’s the moisture gone.
  4. Oil it thin. For a 36-inch griddle, Blackstone specifies 2–3 tablespoons of oil, coating the walls as well as the cooking surface. Spread it with paper towels held in tongs.
  5. Let it smoke. Blackstone says about 15 minutes per coat, until the oil darkens.
  6. Repeat 3–5 times. Add each new coat on top of the last.

Weber’s method runs the same shape with different numbers: handwash with soap and water, dry completely, apply ¼ cup neutral oil wiped evenly over the griddle including the interior and exterior sides, then run all burners on HIGH for about 30 minutes. Which Oil Actually Works Best?

Neutral oils with high smoke points season fastest and taste like nothing afterward, which is exactly what you want on a cooking surface. Weber lists canola, vegetable, or grapeseed oil as its neutral choices; Recteq names grapeseed oil specifically.

Blackstone points owners to its own Griddle Seasoning and Cast Iron Conditioner or another cooking oil if you don’t have it. Any of these will build a solid layer — what matters is the thinness of the coat, not the brand.

Recteq’s slower method, if you have the time, runs the griddle in a cold recteq at 200°F for 2 hours, then raises it to 400°F and applies grapeseed oil every 30 minutes. That process can take 5–6 applications.

What a Chalky or Patchy Layer Means

A seasoning layer that turns chalky is under-bonded, not ruined — Blackstone’s guidance is simply to add another coat. Layers that go on too thick, though, cause an overseasoned griddle plate or rancid oil, which happens when a heavy coat never fully polymerizes and turns sticky instead of slick.

Some smoking and darkening during the process is normal, and Weber advises using grill mitts and tongs if the oil begins to bead.
