“Ceramic” on a cookware label often means a sol-gel nonstick coating, not a clay-and-glaze ceramic pan — and that coating is a different product with different chemistry. That’s the gap worth checking. A pan labeled ceramic can be a genuinely inert fired-ceramic surface, or it can be a coated aluminum pan with a thin sprayed layer.
